Roasted Carrots with Orange and Coriander

Ingredients:
1 pound carrots, scrubbed, trimmed and quartered lengthwise
2 tablespoons unsalted butter
1/2 teaspoon whole coriander seeds, lightly crushed
4 tablespoons freshly squeezed orange juice
1/4 teaspoon red pepper flakes
Sea salt or kosher salt
 
How to Prepare:
1. Preheat oven to 425-degrees.
2. Combine all of the ingredients in a wide ovenproof sauté pan. Place the
pan over high heat, bring to a boil, and stir to combine.
3. Transfer the pan to the oven and roast, tossing halfway through, until
the carrots are tender and glazed, about 15 minutes.
