Recipe Name: Leek and Potato Soup
Ingredients: |
1 large (or 2 small) leek, sliced and washed 1 tablespoon extra virgin olive oil 1 pound potatoes (organic), peeled and diced

6 cups water or stock Sea salt and pepper to taste 2 tablespoons freshly chopped parsley

How to Prepare: |
Use as much of the leek greens as possible. Saute the leeks in the olive oil, add the potatoes, water or stock, and salt (about 1/2 to 1tsp if liquid is unsalted), and simmer for 30 minutes. Puree in batches in a blender until creamy. Adjust seasonings and serve with hot with a sprinkle of parsley.
